Method

  • step 1

Heat oven to 200C/180C fan/gas 6. Pierce the sweet potatoes a few times with a fork, then cook them in the microwave on High for 8 mins or until soft. Rub with 1 tsp of the paprika, 1 tsp of the oil and some seasoning. Transfer to a baking tray, put in the oven and cook for 10-15 mins until crispy.

  • step 2

Meanwhile, make the beans. Cook the onion in the remaining oil until soft. Add the garlic, sugar, vinegar, Worcestershire sauce and the remaining paprika, and cook for a further 1-2 mins until sticky. Tip in the beans, tomatoes and a splash of water, and simmer until the sweet potatoes are ready.

  • step 3

Serve the sweet potatoes with the beans on top, a dollop of soured cream and a pinch of paprika, if you like.

Very yummy quick and easy meal! I came in from digging a pond, weary and not feeling like cooking! However, had defrosted some cooked beans and chick peas, so just threw the other ingredients in, popped potatoes in and meal was soon ready, delicious, filling and easy. I added more worcester…

Great recipe, and really quick to make as well! I added some chilli powder but other than that followed the recipe as written and liked how it turned out. I found it made a lot, there was enough beans mixture for 3 people.

The Worcester sauce gave this an odd aftertaste, I had to add a tin of Heinz beans, some tomato purée, more honey and two chicken stock cubes to cover it up. My husband really liked the finished result, which is just as well as there's loads left over. I won't be making it again.

Delicious as a quick recipe - added chilli to the beans and chopped up fresh mint to the yoghurt :)
