Method

  • step 1

    Heat the oil in a deep pan or flameproof casserole dish over a medium-low heat. Stir in the onion with a pinch of salt and cook for 10-12 mins until softened. Tip in the garlic and peppers and cook for 5 mins. Mix in the coriander stalks, spices, oregano, sugar and chipotle paste if using. Cook for a further 5 mins, until everything is well combined and softened. Pour in the beans, along with their liquid, the tomatoes and stock. Season well and bring to a simmer.

    Leave to simmer on a low heat for 1 hr-1 hr 10 mins until thickened and reduced. Stir in the dark chocolate and season to taste. Serve over rice with lime wedges, avocado, soured cream and coriander on top.

Delicious recipe. Love this! I did mine in the slow cooker and didn’t add the juice from the cans of beans and it had more than enough liquid. Served with rice, sour cream, guacamole, grated cheese and coriander. Will definitely make this again.

Absolutely loved this recipe. Just added a bit more of Lime Juice and was delicious with Nachos, under the grill for a minute with grated cheese, smashed Avocado and Sour cream.

I didn't have chiplote paste so I used 2 tsp of chipotle chilli flakes, which worked well enough. It was fine but quite boring, if healthy. I didn't use the sugar or chocolate so I might add the chocolate to what's left and more seasoning. I might also add sour cream to the plate, because you can't…

This was amazing! I used 2/3 of each tin of beans which was enough for two adults, two children and two left over portions. Excluded chipotle paste and it was delicious. I will definitely be making this again
