One of the hardest things to give up when following a keto plan is the comfort of staples such as noodles and pasta. Our summer courgetti and meatballs solves this perfectly – spiralised courgetti doubles up to provide the ballast of noodles while also contributing to your five-a-day.
UK guidelines suggest we eat two portions of fish per week, with one being a fatty variety such as salmon – fatty fish are a valuable source of heart-healthy essential fats (omega-3) and a useful source of vitamin D. In the UK its estimated that one in five of us have low levels of this vitamin and with few food sources it makes our salmon with spinach and tartare cream a valuable inclusion to the weekly plan. We’ve lightly seared the salmon to create a crisp, deliciously tasty exterior to the fish and served it with spinach and a creamy sauce. White fish, such as the cod in our baked cod with goat’s cheese & thyme makes a valuable contribution to the diet, too. It’s a useful source of the mineral iodine, which regulates our metabolism and supports thyroid function.
Cooked on the hob in minutes, our lamb & lettuce pan-fry is a budget-friendly dish – we’ve used lamb neck to keep costs down and combined the lettuce with a staple food from the freezer, frozen peas. Often avoided by keto followers, peas can be enjoyed in moderation, so stick to the amounts we’ve specified.
Our chicken and mushrooms make a great family supper, using chicken thighs rather than breast – we’ve increased the iron contribution while packing in loads of flavour. Serve with a creamy mash for those members of the family who are not following the keto plan.
