Method

  • step 1

    Heat the oil in a large frying pan over a medium heat and cook the onion until softened and translucent, about 8 mins. Push to one side of the pan.

  • step 2

    Squeeze the sausagemeat from the skins into the centre of the pan. Cook for 5-8 mins until browned, squashing into smaller chunks with the spoon as it cooks. Add the garlic and tomatoes. Let the tomatoes soften for a few minutes, stirring now and then to prevent sticking. Stir in the harissa paste and mascarpone.

  • step 3

    Meanwhile, cook the pasta in salted water in a saucepan following pack instructions.

  • step 4

    Drain the pasta, saving a mugful of the water. Tip the pasta into the sauce, add the parsley and stir together. Add a splash of the pasta water to loosen the sauce – it should be silky and coat the pasta without pooling in the bottom of the pan. Grind over some black pepper to serve, if you like.

Reduced the pasta to 75g, made two portions, chopped the sausages into bit size pieces, added 2 teaspoons of fennel seeds, half a red pepper plus a tin of mixed beans to the red onion. Used half a carton of tomato soup in lieu of cherry tomatoes, plus the harrisa paste and a teaspoon of ras el…

Reduced the pasta to 75g, increased the Harissa to double. Used Sour Cream instead of cheese and added spinach.

Really enjoyed this, we need more meals for one. I added a big handful of spinach just at the end of cooking. Next time I’ll add a bit less pasta, felt a bit too much. Will definitely make again.

Delicious. Swap cherry tomatoes for 400g of chopped tomatoes and you get a much richer flavour. Double the amount of harissa per person as 2 tsp won’t impart any flavour at all, and that’s the main flavour profile of this recipe!

Fantastic! Very quick and easy. I added extra Harissa and reduced the pasta quantity as 100g per person seemed way too much. Delicious flavour, will do again
