If you're entertaining a crowd, then salmon en croûte makes an ideal dinner party showstopper. It also works as an alternative centerpiece for special occasions such as Christmas and Easter.

Our version takes the two key ingredients of salmon and pastry, then ups the luxe factor with additions such as cream cheese, dill, lemon and a pickled cucumber side dish. Drawing inspiration from a salmon bagel, these delicate flavours balance perfectly with the enclosing buttery puff pastry. Using shop-bought pastry is easiest, and we encourage buying the all-butter variety for maximum richness.

Having assembled your masterpiece, why not add a finishing decorative flourish? We've mimicked fish scales by pressing along the top of the pastry with a spoon. Once complete, the en croûte can be stored in the fridge for up to 24 hours before baking, or frozen for up to a month, making it easy to get ahead for a special event.
