Method

  • step 1

    Purée apricots in a food processor with 150ml boiling water and the oats, then scrape the mixture into a bowl. Toast coconut, sunflower seeds and sesame seeds in a non-stick pan over a low heat, then stir into the apricots with the cranberries, hemp powder and chia seeds to make a thick paste.

  • step 2

    Roll into a long log on a sheet of cling film. Wrap tightly, chill, then slice thinly to serve. Will keep in the fridge for 2 weeks.

Do you need to use the hemp powder

Hi 57cher,

you could make these without the hemp powder but just be aware that the nutritional information will be incorrect, the hemp provides lots of protein.

I needed to source some of the ingredients from a health food shop, and even then I got shelled hemp seeds rather than powder. I also substituted the cranberries for sultanas as I forgot to buy them. I made this, following the recipe to the T, but I just ended up with a squidgy paste which wouldn't set at all. I feel there is some sort of step missing here. If I was snaking this again I wouldn't add the oats to the puree and add after. And cook in a tin for about 20mins to try to help set.

Sounds like a really useful recipe - however all ingredients IMPOSSIBLE to source! can you suggest nutritional/match/ alternatives to hemp powder and chia seeds please

I bought every ingredient from Tesco apart from Hemp which can be bought on Amazon. You just need to know where to look. Some of it is in the baking Isle.
