  • 2 standard eggs
  • 8oz desiccated coconut
  • 5oz caster sugar

    Method

    • step 1

      Pre-heat oven to 180c. Grease a baking tray Beat eggs well. Stir in coconut and sugar.
    • step 2

      Leave to stand for 20 min.
    • step 3

      Dip hands in cold water, shape mixture into pyramids.
    • step 4

      Place on a baking tray
    • step 5

      Put in oven for 25-30min. Remove from tray and cool on a wire rack.

    I used this recipe as a tart filling with left over pastry and a little jam in the bottom. It turned out really well but the temperature was a little high and needed turning down after the first 15 minutes.

    Very easy to make but I wonder if the amounts are right, particularly the amount of sugar; as they were cooking the melted sugar seeped out from my pyramids and then they began to collapse - if I hadn't recused them they would have been a like a tray-bake!     I have been trying to make these but am just ending up with a good mess!! What am I doing wrong??

    Your oven is too hot. Turn it down to 150 -160C and cook for 25 - 30 mins. The plan is to cook the egg without frazzling the sugar.
