  • Gluten-free Plain Flour 250g
  • Butter 100g
  • 1 egg
  • 1/2 tsp of Xanthan Gum
  • 1/2 tsp Baking powder
  • 85g Caster Sugar
  • 1 tsp Mixed Spice
  • 1 tsp Vanilla extract
  • a little icing sugar to dust
  • Sultanas 50g (or Currants, Raisons etc)

    Method

    • step 1

      Whisk together Egg, Butter, Sugar, Vanilla extract until all mixed well.
    • step 2

      Sift in Flour, Baking Powder, Xanthan Gum & Mixed Spice. Add Sultanas.
    • step 3

      Using your hands mix all ingredients well to form a ball of dough. (if still wet add a little extra flour).
    • step 4

      Using your hands create small balls (approx 30-40g) , using the palm of your hand flatten to your required thickness. Cook on a medium hot griddle either side for 3 minutes or until golden. Dust with icing sugar.

    Mine were amazing. I used GF SR flour (because it was what I had) and omitted the xanthan gun and baking powder. I mixed the sugar, egg, van ess and butter with the whisk attachment of my food mixer and switched to the dough hook when I added the flour etc. I used a spoon to make small scoops of…

    I followed recipe exactly with the exception of dairy free butter. Mixture is very sticky so don't expect to use cutters. I put my mixture in the fridge for 20 mins first to firm up. Also traditionally dusted with caster sugar when they are still warm, not icing sugar.

    This recipe worked well, my wife is a celiac and the welsh cakes were very welcome. I didn't add the Xanthum Gum, or Vanilla . The excellent method above worked really well ( don't try and roll it out, or use a cutter ). Watch the colour when cooking. I highly recommended you making these.
