  • 450g/1lb of Bananas (better when they are starting to go brown)
  • 255g/9oz of Self-Raising Flour
  • 283g/10oz of Caster Sugar
  • 113g/4oz of Margarine
  • 2 Eggs
  • Few drops of Vanilla Essence
  • 1/2 tsp Bicarbonate of Soda
  • Filling
  • 140g/5oz butter, softened
  • 280g/10oz icing sugar
  • 1-2 tbsp milk
  • Strawberry Jam (Hartleys Best I use)

    Method

    • step 1

      Preheat oven to 180C/fan
    • step 2

      Mash the bananas in a bowl
    • step 3

      In a separate bowl, put in the eggs, caster sugar and margarine
    • step 4

      whisk or mix for about a min
    • step 5

      add flour and bicarbonate of soda and mix
    • step 6

      and vanilla and bananas and mix
    • step 7

      divide into 2, 15cm round cake tins lined with grease proof paper
    • step 8

      Place in oven for 25 mins on middle shelf
    • step 9

      When cooked leave for 5 mins to cool before transfering to wire rack to cool completly
    • step 10

      Once cooled, mix butter, milk and icing together, once mixed add a nice thick layer to one half and a nice layer of jam to the other half and place together.
