Ingredients
For the stuffing
- 20 fresh sardines emptied with no scales
- 2 garlic cloves
- 30g of fresh parsley, cut thinly
- 30g of fresh coriander, cut thinly
- 1 tea spoon of ground cumin
- 1 tea spoon of ground paprika
- 1 tea spoon of salt
- 3 table spoons of olive oil
To fry
- 3 eggs
- Plain flour
- 50g of neutral oil
To serve
- 2 lemons
Method
- STEP 1You need to debone and butterfly each sardine. You find the spine behind the head and carefully pull it all the way down with the finger. You also need to remove the back finn and cut the rib bones.
- STEP 2For each butterflied sardine, find another one of roughly the same size, because we try to make "sandwiches".
- STEP 3In a large bowl, mix the crushed garlic, the fresh parsley, the fresh coriander, the cumin, paprika and salt, and the olive oil.
- STEP 4Spread some stuffing on one sardine and close the sandwich with the matching one. Do the same for all the sandwiches.
- STEP 5Heat some olive oil in a very large skillet. Beat the eggs in a separate bowl.
- STEP 6Dip one sandwich in flour and also in egg then fry to minutes on each side. Repeat the operation for all the sandwiches. Bonne dégustation!!
