Ingredients
- 150g caster sugar
- 50g softened butter
- 2 eggs
- 4 tablespoons water
- 3 very ripe mashed bananas
- 200g plain flour
- 1 teaspoon bicarbonate of soda
- 1/4 of a teaspoon baking powder
Method
- STEP 1Preheat oven to 180 c/ gas mark 4 and line a loaf tin of baking paper
- STEP 2In a medium bowl beat sugar and butter till smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until well blended
- STEP 3Mix in the flour, bicarbonate of soda and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients
- STEP 4Bake till the top is firm to the touch and golden brown in colour. When bread is removed from the oven, allow to cool on its side for 10 minutes, then remove from tin and let cool on wire rack
