Method

  • step 1

    Heat the grill to medium-high and line a baking sheet with foil. Lay the chicken breasts upside-down on the foil, brush with 1 tbsp of barbecue sauce, then grill for 5 mins. Turn the chicken breasts over, add the bacon rashers to the tray, then return to the grill for a further 5 mins.

  • step 2

    Drizzle the chicken with the remaining barbecue sauce, sprinkle with cheese, then place back under the grill for 2-3 mins until the chicken is cooked through, the cheese is bubbling and golden and the bacon is crispy. Top the chicken with the bacon to serve.

SALSA

If you don’t like barbecue sauce, spread the chicken with tomato relish or salsa instead.

Cut the chicken breast in half horizontally and flatten it out slightly the chicken breast will be nice and flat and the cheese won't run off. You will need 2 more rashes of bacon as you will now have 4 pieces, not the original 2 pieces of chicken. What can be better then extra bacon? yum yum.

I flattened the chicken first , making grilling more even. This also tenderizes the meat .

This was fantastic! It couldn't have been tastier. I agree that the chicken needed to cook longer and that the cheese runs off the chicken. But it's not a problem. Just add more cheese than called for so you have the right amount left! I also found that if you top it with the bacon before you lift…

i am a young adult and i cooked this recipe. i'm a connoisseur when it comes to cooking and this was my first time cooking a dinner on my own and it was delicious! im not just saying this because i made it but it was absolutley fabulous!

I haven't tried this recipe as I'm not sure what barbeque sauce to use!! Is it a ready made marinade type of thing or a BBQ table sauce. Any advice??
