- 140g smoked salmon
- 1 fennelfinely sliced
- 1 red onionfinely sliced
- juice 1 lime
- 2 tsp white wine vinegar
- 3 tbsp olive oil
- a little black pepper

Method
step 1
Divide the smoked salmon between 4 plates. Toss the fennel, red onion, lime juice, white wine vinegar, olive oil and a little black pepper. Arrange over the salmon and serve.

Lovely simple starter. I used less red onion and the dressing is very tangy so I would recommend adjusting to taste. @loves_cooking
