Method

  • step 1

    Preheat the oven to 200°C/180°C fan/gas 6. Place the gnocchi in a large bowl, cover with boiling water and leave for 2 minutes. Stir, then drain thoroughly.

    Add the gnocchi to a large roasting tin, drizzle with the olive oil, then add the tomatoes, mozzarella, basil stems, sausages, garlic and leafy greens. Toss to combine and season with salt and black pepper.

  • step 3

    Bake for 20 minutes, until the gnocchi are slightly charred around the edges. Remove from the oven and leave to cool for a few minutes before serving.
    Serve in bowls, sprinkled with chopped basil.

I think this recipe should be for two people. The ingredients quoted are no way enough for four. It was very tasty though and will definitely do it again.

What leafy greens you recommend and do you just put basil stems with no leaves in oven?

The leaves are to be sprinkled on the ready meal in the end. Do not put them in the oven.

What you mean just the stems of Basil?

Add the basil stems to your other leafy greens and cook with the gnocchi, tomatoes, mozzarella, sausages etc, sprinkle the basil leaves (uncooked) at the end as you serve. Hope this helps

I made this with grated mozzarella and cheddar cheese mixed (not vegan) and a little bit more cheese than the recipe required. We all thought how delicious this recipe was. I will be making this again soon.
