Really easy roasted red pepper sauce
This red pepper sauce is so handy to have bagged in the freezer. The recipe makes enough for two meals – use as a base for baked gnocchi or pasta

Method
step 1
Heat the oven to 180C/ 160C fan/ gas 4. Cook a 500g pack gnocchi following pack instructions, then drain and tip into a casserole dish. Pour over ½ batch roasted red pepper sauce (see 'Goes well with…' below), then tear 125g ball mozzarella over the top and sprinkle over 2 handfuls breadcrumbs. Bake for 20 mins until golden and heated through.

I loved the recipe - I left the peppers and onions in the sauce whole though, as this added texture to the dish. I also added the whole quantity of sauce rather than half!

We thought that this recipe was really good. I did use the really easy rEd pepper sauce recipe from this site (yummy) As I had some streaky smoked bacon to use up, I cooked it till it was crispy and then added it to the dish along with some wilted spinach. . Made enough for 2 of us. Definitely a…

I've made this recipe with a romesco sauce instead of the suggested one and it was completely DELICIOUS! I also added spinach and 2 balls of mozzarella as one didn't really seem enough. It went down an absolute treat.
