  • 4 tbsp lemon curd
  • 200g tub Greek yogurt
  • 250g tub virtually fat-free fromage frais
  • 400g strawberries
    hulled
  • 8 shortbread
    rounds, roughly crumbled

Method

  • step 1

    Mix together the lemon curd, yogurt and fromage frais. Roughly mash the strawberries, then gently stir them through the lemon mixture.

  • step 2

    Drop half the shortbread into 4 glasses and top with half the fruit yogurt. Sprinkle over the remaining shortbread and finish with the rest of the fruit yogurt.

RECIPE TIPS
GIVE IT A TWIST

Try different fruit curds – orange curd will give a sweeter edge than lemon, passion fruit curd will add an exotic touch. Swap raspberries or cherries for the strawberries.
