Fresh cucumber & apple salad

- 40g pistachioscrushed
- 2tbsp white wine vinegar
- 1tsp maple syrup
- 3tbsp extra virgin olive oil
- 1 cucumberhalved lengthways then halved crossways, then cut into 1cm pieces
- 1 Granny Smith applecut into half-moon slices

- 3 radishesthinly sliced
- 10g chopped fresh basil
- 2tbsp fresh mint leaves

Method
step 1
Put most of the pistachios (reserving some to garnish) in a food processor. Add the vinegar, maple syrup and oil, and blitz for a few seconds until slightly smooth. Season to taste with salt and black pepper.
step 2
Combine the remaining salad ingredients in a serving bowl. Pour the pistachio dressing over the top and gently fold through. Sprinkle with the remaining pistachios and season with more salt and black pepper.
