Method

  • step 1

    Cook the noodles, drain well, then toss with a drizzle sesame oil.

  • step 2

    Finely slice the mangetout, cut the carrot into matchsticks and deseed and slice the red chilli.

  • step 3

    Add to the noodles with the toasted sesame seeds and some shredded cooked chicken, if you have it. Pack with a small portion of soy sauce.

RECIPE TIPS
CARROT & SEED SARNIE

Grate 1 carrot and mix with 1 tsp sunflower seeds, 1 tbsp raisins, a very small handful beansprouts and 1 tbsp of your favourite light fruity dressing (we used Sainsbury’s Mango & chilli dressing). Spoon into a wholemeal roll or between 2 slices wholemeal bread.

AVOCADO & ORANGE SALAD

Slice ½ avocado into a plastic container with segments from ½ orange, handful rocket leaves and a handful chickpeas. Add a squeeze orange juice, splash olive oil and a splash red or white wine vinegar. Pop on the lid and shake to mix.

This dish is so simple yet so tasty. I swap the noodles for egg noodles. I usually make a batch to have for lunches during the week, and warm it up in the microwave. Made it two or three times and I plan to keep making it!

I used some cold left over lamb instead of chicken which worked surprisingly well. I added spring onions and sweet chilli sauce for a bit more flavour. Nice simple lunch which I will make again.

I wasn't sure about how this would taste when I was making it but it all came together at the end and was a really lovely meal. Loved the contrast between the soft noodles and the crunchy veg. Don't skip the toasted sesame seeds though - they give the dish a lot of extra flavour!
