Method

  • step 1

    Press the sponge fingers into four glasses. Pour on enough cold coffee to soak the sponge.

  • step 2

    Add Baileys ice cream, double cream whipped with icing sugar and Baileys. Scatter with chocolate flakes.

This was perfect to half and make for two people. Can be adjusted to suit your tastes. I added a capful of amaretto, an espresso shot and used vanilla ice cream instead of the suggested bailey's one. Delicious!

Really is delicious and sooo easy to make (put together)! if you didnt like baileys (who wldnt) you could easily adapt to something more to your tastes.
