
Air fryer quesadillas
Throw together cheese, tomatoes, chilli, spring onions and chorizo to make these easy air fryer quesadillas – they'll prove a hit with the whole family
- 250g cheddargrated
- 2 medium tomatoesfinely chopped
- 150g chorizofinely chopped
- ½ small bunch of parsleyfinely chopped
- 1 red chillifinely chopped (deseeded if you prefer less heat)
- 6-8 spring onionsfinely sliced
- 1 limejuiced
- 8 large flour tortillas(see tip, below)
- lime wedgesto serve

Method
step 1
Heat the air fryer to 180C. Combine all the ingredients except the tortillas and lime in a bowl.

Spoon the filling onto one half of each tortilla, then fold over the other half and press down firmly. You want the filling to be near the edge but not falling out.

Put as many tortillas as you can into your air fryer in a single layer – it’s fine if they overlap a little. Put a spoon or heatproof utensil on top to stop the tortillas coming apart during cooking. Cook for about 10 mins, turning after 5 mins until golden and crisp at the edges. Serve with the lime wedges on the side.
