Method

  • step 1

    Peel the carrots and quarter them lengthways. Halve the quarters so each carrot produces 8 batons.

  • step 2

    Mix the spices and potato starch in a large flat bowl. Stir in the olive oil until everything is combined.

  • step 3

    Add the carrot batons to the bowl and mix to evenly coat them in the spice mixture.

  • step 4

    Heat your air fryer to 200C. Add a liner or baking parchment to your air fryer basket and place enough carrot sticks to form a single layer. Cook for 18-20 mins, flipping them over halfway through until they are starting to brown and crisp a little. You may need to do this in batches. Sprinkle with a little salt when they are done.

  • step 5

    To make the dip, put the yogurt in a medium sized bowl and add half the lemon juice, the garlic powder and the mint leaves. Stir to combine then season to taste with salt and freshly ground black pepper. Add more lemon juice if you think it needs it.

  • step 6

    Serve the fries hot with the dip on the side. They lose their crispness when they cool completely so reheat them for a couple of minutes in the air fryer before serving.
