Method

  • step 1

    Steam the broccoli for 4 mins until just tender, tip into a large bowl, then season. Meanwhile, heat the oil in a pan, then fry the shallots for 2 mins. Add the chillies and garlic, then cook for a further 4 mins until softened.

  • step 2

    Remove the shallots, chilli and garlic with a slotted spoon, then mix with the broccoli, olives and chicken. Add the soy sauce to the pan, warm over a medium heat, then pour over the salad. Eat warm or cold.

RECIPE TIPS
TIP

If you want to make this salad more substantial, add a pack of egg noodles, cooked according to pack instructions, then cooled under running water.

I adapted this for what I had in the fridge and it made an easy and tasty light supper, but it’s not really a salad! I used red onion instead of shallots, a mix of tenderstem broccoli, fine beans and sugar snap peas, and s squirt of sweet chill sauce as well as the soy sauce but no fresh chilliest.…

I had this last night with the kids, but gave them rice with theirs. Easy and tasty, added more olives though as the kids love them, and also some fine green beans

just had this for lunch, amazingly tasty, and very easy to do. Will definitely do again, and will try with sweet chili sauce next time as that sounds good.

Made this thinking it would be quite simple and bland, but it was really yummy! Omitted the olives though, as not keen on them. A great healthy summer supper.

Made this according to the recipe but without olives and using a reduced salt soy sauce.. Loved it! It was full of flavour and my partner (who is quite fussy) loved it too! Definitely a new favourite for us, thanks!
