METHOD
1 Drizzle the oil into a non-stick frying pan and warm over
a
medium heat.
2 Gently beat the eggs in a large shallow bowl. Mash one of
the bananas and add to the bowl along with the cinnamon, vanilla and Alpro Soya Unsweetened drink. Whisk
until combined.
3 Dip the bread slices into the egg mixture, making sure to
coat both sides, and place on the hot pan. Cook for 4 minutes, flip over with a spatula and brown the
other side. Once golden, remove from the heat.
4 To serve, cut each slice in half and divide between 2
plates. Top with a dollop of Alpro Mango More Fruit, No Added Sugars Big Pot, a scattering of toasted
coconut flakes, the remaining banana sliced up and a drizzle of maple syrup.
