Plant-based fudge With Alpro Almond Unsweetened drink

A splash of Alpo-Almond Unsweetened drink makes these fruity fudge squares extra tasty

Makes 12 | Prep 10 mins, plus overnight setting | No cook
  • 125g desiccated coconut
  • 150ml Alpro Almond Unsweetened drink
  • 2 tbsp nut butter
  • 1 large avocado, peeled, stoned and roughly chopped
  • 150g pitted dates, roughly chopped
  • 3 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1 tsp instant coffee (optional)
  • 75g mixed dried fruit and nuts
  • handful of raspberries
    METHOD
  • 1 Using a food processor, blend the desiccated coconut and Alpro Almond Unsweetened drink for 5 mins until creamy. Add the nut butter and blend for another 3 mins. Next add the avocado, dates, cocoa powder, vanilla and coffee if using. Pulse until smooth.

  • 2 Transfer the mixture into a small loaf tin lined with greaseproof paper. Sprinkle over the dried fruit and nuts and the raspberries, and leave to set in the fridge overnight. Once set, cut into 12 squares.
