1 Place the rice, Alpro Almond Unsweetened drink, maple
syrup, vanilla and 200ml water in a large pan. Mix and cook gently over a low heat for around 45 mins,
stirring regularly until you have a thick and creamy mixture.
2 In a separate pan, combine the berries, maple syrup and
mixed spice. Cook over a medium heat for 5 mins, until the fruit has softened and started to break down.
3 Spoon the rice pudding into a serving dish. You can add a
splash of Alpro Almond Unsweetened drink to loosen if needed. Top with the spiced berry compote.
