- 125g rice noodles
- 100g bean sprouts
- 1 carrot, peeled and sliced
- 80g baby spinach
- The juice of one lime
- 50g peanuts, diced
- 25g sesame seeds
- Rapeseed oil
- Dried chillies
Method
step 1
Heat some rapeseed oil in a large frying pan and sprinkle some dried cherries into the oil.step 2
Shallow fry the carrot and bean sprouts in the oil. A few minutes before they are cooked, add the rice noodles and stir fry them.step 3
Just before serving, stir the spinach into the mix so it wilts, and mix in the lime juice, sesame seeds, and peanuts.
