  • 125g rice noodles
  • 100g bean sprouts
  • 1 carrot, peeled and sliced
  • 80g baby spinach
  • The juice of one lime
  • 50g peanuts, diced
  • 25g sesame seeds
  • Rapeseed oil
  • Dried chillies

    Method

    • step 1

      Heat some rapeseed oil in a large frying pan and sprinkle some dried cherries into the oil.
    • step 2

      Shallow fry the carrot and bean sprouts in the oil. A few minutes before they are cooked, add the rice noodles and stir fry them.
    • step 3

      Just before serving, stir the spinach into the mix so it wilts, and mix in the lime juice, sesame seeds, and peanuts.
