Berbere Spice Blend
- 3 tbsp paprika
- 1 tbsp fenugreek
- 1 tsp chilli flakes
- 1 tsp coriander
- 1 tsp ginger powder
- 1 tsp onion flakes
- 1 tsp garlic powder
- 1 tsp cloves
- 1 tsp cumin
- 1 tsp cinnamon
Berbere Chicken

- 2 chicken fillets, sliced
Berbere Chicken Pasta
- 3 tbsp paprika
- 1 tbsp fenugreek
- 1 tsp chilli flakes
- 1 tsp coriander
- 1 tsp ginger powder
- 1 tsp onion flakes
- 1 tsp garlic powder
- 1 tsp cloves
- 1 tsp cumin
- 1 tsp cinnamon
- 2 tbsp berbere spice
- Salt to taste
- 2 chicken fillets, sliced
- 2 tbsp sunflower oil
- 1/2 onion, chopped
- 2 fillets berbere chicken, sliced
- 1 can chopped tomatoes
- 200g pasta (any short pasta shape)
- 1 tbsp berbere spice blend
- Salt to taste
- 100g sugar snaps, sliced
- 100g mushrooms, sliced
Method
step 1
Make the berbere spice blend by mixing all the spices together in one bowl.step 2
Prepare the berbere chicken by sprinkling the spice mix and some salt on the chicken. Mix well with a wooden and keep aside.step 3
Fry the onions in the oil until translucent. Pour in the chicken slices and allow to cook on both sides to seal the spices in.step 4
Add the chopped tomatoes, pasta and some water. Add the additional berbere spices and some salt to taste. Give it a stir and cover the pan.step 5
Allow to cook for the time specified on the pasta pack. Just before it is ready, add the vegetables and cover for a few minutes. Remove from heat and serve.
