  • basil - 1-2 cups
  • watercress - 1-2 cups
  • olive oil - 125ml
  • salt - 1/4 tsp
  • 4 fat garlic cloves
  • nutritional yeast
  • 4 oz / 0,5 cups roasted pine nuts

    Method

    • step 1

      To roast the pine-nuts - lie them on greaseproof paper and place in pre-heated oven (220ºC) and roast for 2 mins 30 seconds, remove, shake, replace in oven for another minute until nice and brown
    • step 2

      1 Put all ingredients except the nutritional yeast in blender - switch on - start gently and increase speed - occastionally, gently push ingredients down if necessary
    • step 3

      Add 1 tbsp nutritional yeast (or to taste) Makes enough for pasta for 4
