Cheesy spinach rice scramble

- 2 spring onions chopped
- 1/2 bag washed spinach
- 2 eggs
- 1 1/2 oz grated cheddar (or cheese of your choice)
- few spoons of cold leftover rice
- Freshly ground black pepper
- little butter to fry
Method
step 1
Melt the butter and gently fry the spring onions for 1 minutestep 2
Add the cooked rice and stir 1 mintuestep 3
Add the spinach and cook till wiltedstep 4
Gently beat the eggs, pour over the onion and spinach mixstep 5
Add ground black pepper and grated cheese and 'scramble' over a medium heatstep 6
Serve with crisp buttery toast
