  • 150g Brown Rice
  • 30g Green lentils
  • Handful of sliced chorizo
  • Handful of cubed pancetta
  • 1 Red pepper, chopped
  • 1 chilli, into half circles
  • 1 medium onion, diced
  • 2 garlic cloves, sliced
  • 800ml Chicken Stock

    Method

    • step 1

      In a large saucepan, fry the onions until soft and add the garlic
    • step 2

      Add the chorizo, pancetta, red pepper, and chilli. Leave out the chilli if spice isn't your thing. Fry until the pepper softens.
    • step 3

      Add the rice and the lentils and pour the stock over. Give it a good stir!
    • step 4

      Bring up to the boil and then simmer for 25 minutes. Add extra water if it gets a bit dry.
