Porridge

  • 80g rolled oats
  • 100ml almond milk ( optional )
  • 1 tsp vanilla extract ( optional )
  • 10g sultanas

Apple topping

  • 80g rolled oats
  • 100ml almond milk ( optional )
  • 1 tsp vanilla extract ( optional )
  • 10g sultanas
  • 1 whole apple
  • 1 tbsp lemon juice
  • 1 tbsp sweetner
  • 1 tsp cinnamon
  • 1 tsp ground nutmeg
  • 1/2 tsp allspice

    Method

    • step 1

      Pour the rolled oats into a saucepan, along with 300ml of water and bring to the boil.
    • step 2

      Bring the porridge down to a simmer and add in the sultanas. When the porridge begins to thicken, you can choose to add the almond milk, vanilla extract or simply more water. Leave the oats on a low simmer for 5 minutes, stirring occasionally.
    • step 3

      Peel and chop your apple into 3cm chunks. Place the apple into a saucepan along with the lemon juice and 3 tbsp of water. Stir so all chunks are covered in the juice.
    • step 4

      On a low heat, add in the sweetner and cover until the apple begins to soften. When the chunks become tender, add the spices and stir through. Leave to cook for a further minute.
    • step 5

      Pour the porridge oats between two bowls and top with the warm spiced apple mix. Serve and enjoy.
