  • 6 Chicken thighs
  • 12 Rashers Streaky Bacon
  • 1 pack of sage and onion stuffing (or make your own.)

Spice Mix

  • 6 Chicken thighs
  • 12 Rashers Streaky Bacon
  • 1 pack of sage and onion stuffing (or make your own.)
  • 2 tsp garlic salt
  • 2 tsp garam masala
  • 1 tsp turmeric

    Method

    • step 1

      Make the stuffing mix, as per packet instructions (or own recipe.) and the spice mix.
    • step 2

      Open out the chicken thighs, and trim excess fat off. Lay tho opened out thighs on top of 2 bacon rashers. Then make sausage sized batons of stuffing and place across the centre of the chicken thighs. Wrap the chicken thighs and bacon around the stuffing.
    • step 3

      Dip the open ends of the ballottine in the spice blend.
    • step 4

      Place in a pre-heated oven at 200ºC/180ºc fan, and cook for 25 minutes, or until bacon is browning and stuffing is piping hot.
