- 12-15 large ripe plums
- 75g caster sugar
- 1 tsp vanilla extract
- 1 whole lemon zest
Crumble
- 12-15 large ripe plums
- 75g caster sugar
- 1 tsp vanilla extract
- 1 whole lemon zest
- 350g plain flour
- 175g unsalted butter
- 90g demerara sugar
- 90g light brown sugar
Method
step 1
Pre-heat oven 180C/Gas mark 4step 2
Stone and quarter plums. Mix the plums with sugar, vanilla extract and lemon zest. Move to oven-proof baking dish and set asidestep 3
Put flour, butter and sugars into a mixing bowl. Using your hands rub together until it resembles breadcrumbs.step 4
Cover the plums with half of the crumble mix and press down lightly. Sprinkle the other half over the top for a crunchy top.step 5
Place in centre of the oven for 30 min or until the crumble topping is golden brown and the plums softened.
