  • 2 thick-cut free-range pork chops
  • Salt and pepper

For the salsa

  • 2 thick-cut free-range pork chops
  • Salt and pepper
  • 1/3 cup chopped Kalamata olives
  • 1 red pepper, diced
  • Zest of 1/2 orange
  • 1 orange, peeled and chopped into pieces
  • 1 spring onion, chopped
  • 1 clove garlic, minced

    Method

    • step 1

      Heat grill and season the chops well on both sides. Place under grill for 8 minutes. Turn and cook for 8 minutes longer.
    • step 2

      Place all of the salsa ingredients in a bowl and mix well.
    • step 3

      Transfer the grilled chops to plates and split the salsa between them.
