- 1 tbsp sunflower oil;
- 2 tsp mild curry paste (patak korma sauce)
- 2 large chicken breast cut into pieces
- 2 medium sweet potatos cut into bit size pieces
- 4 tbsp red lentils
- 300ml/1/2pt chicken stock
- 400g coconut milk
- 175g/6oz frozen peas
Method
step 1
heat oil in pan stir in curry pastefry for 1 min.Add chicken,sweet potato and lentils stir to coat,then pour in stock coconut milk then simmer for 15 minsstep 2
tip in peas,bring back to the boil simmer for 5 mins serve with noodles or rice
