  • 100g Margarine
  • 80g Brown sugar
  • 1 egg
  • 225g wholemeal flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 2 tablespoons honey
  • 225g grated carrots
  • 25g Walnuts
  • 25g raisins

    Method

    • step 1

      Cream the butter and sugar together.
    • step 2

      Add the dry ingredients and the honey
    • step 3

      Finally add the carrot
    • step 4

      Spoon into cake papers in muffin tins and smooth the top. Bake at 180°C for 30 mins.
