Batter
- 2 cups dates, soaked for 1 hour
- 2 bananas
- 1 teaspoon cinnamon
Fruit
- 2 cups dates, soaked for 1 hour

Icing
- 2 cups dates, soaked for 1 hour
- 2 bananas
- 1 teaspoon cinnamon
- 1 cup blueberries
- 1 cup dates, soaked for 1 hour
- 1/2 cup blueberries
- meat of 1 Thai coconut
- 1 teaspoon alcohol-free vanilla extract
Method
step 1
In a food processor or high speed blender, blend till smooth all Batter ingredients. Add the blueberries and mix.step 2
Spread over spiralized apples and serve with berries.step 3
Pour into paper cases and dehydrate at at 42 degrees Celsius (108 degrees Fahrenheit) for 6-7 hours until top and sides are firm.step 4
In a food processor or high speed blender, blend till smooth all Icing ingredients, and spread icing over the cupcakes, decorating with blueberries.
