  • Cabbage (Shredded)
  • 1 egg (whisked)
  • Pork Loin (seasoned with Salt and Pepper)
  • Flour
  • Panko Breadcrumbs
  • 1 cup Rice
  • (For the Tonkatsu Sauce) 1/2 Cup Ketchup
  • 2 1/2 Tablespoons of reduced soy sauce
  • 2 1/2 Tablespoons of Worcester Sauce
  • 1 1/2 Tablespoons of Dry Sherry
  • 1 1/2 Tablespoons of White Sugar
  • 1/2 Teaspoon of Garlic Powder
  • 1/2 Teaspoon of Ground Ginger

    Method

    • step 1

      Cut slits in pork loin. Dip in egg, then coat in flour, then breadcrumbs before cooking in (lots of) oil until brown and crispy. Slice in two. Start cooking the rice. and cooking the cabbage
    • step 2

      Make the Tonkatsu sauce by mixing the ingredients listed above and then put in a microwave for 1 minute to let the ingredients blend. Preferably leave to stand
    • step 3

      Lay out the nori on top of some cling film, then place rice, cabbage and a drizzle of Tonkatsu Sauce in the middle. Then put the half slice of loin, some more sauce, then rice. Then package this all up folding in the nori from the corners to meet in the centre. Then wrap in the remainder of the cling film to hold it together.
