Cake

  • 6oz Self Raising Flour
  • 1tsp Baking Powder
  • 6oz Butter
  • 6oz Caster Sugar
  • 3 medium eggs
  • 2 tbsp Milk
  • Finley Grated rind of 2 lemons

Drizzle

  • 6oz Self Raising Flour
  • 1tsp Baking Powder
  • 6oz Butter
  • 6oz Caster Sugar
  • 3 medium eggs
  • 2 tbsp Milk
  • Finley Grated rind of 2 lemons
  • Juice of 2 lemons
  • 4oz Caster Sugur

    Method

    • step 1

      Sift flour and baking powder into a big bowl
    • step 2

      Add all other cake ingredients into bowl and beat until smooth
    • step 3

      Pour into a greased/baselined 2lb loaf tin
    • step 4

      Bake in preheated oven 180C for 45-1hr
    • step 5

      Put lemon juice and sugar in a pan and heat gently until the sugar has dissolved
    • step 6

      Drizzle syrup over warm cake so it soaks into the cake
