The Peppermint Fancies
- 1 Egg White(s)
- 1tsp Peppermint extract
- 275g Icing Sugar
- Optional: Food Dye
Decoration (optional!)
- 1 Egg White(s)

- Dark Chocolate (tastes the best in my opinion!)
- Sprinkles
- Cookie Cutters (to shape the fancies, or just go freehand!)
Method
step 1
Place the egg white and a few drops of peppermint into your bowl, and beat well. (Use any utensil, preferably a wooden spoon or whisk.)step 2
Add the icing sugar and stir well until a soft, fondant like dough forms, this is when you should be adding the colouring. Use your hands if you need to form it into a ball.step 3
Now time to prepare them! You can get really creative with these, but for a formal Peppermint fancy, you can cut out little circles and decorate with a fork or straw, if you wanted, you could add a bit of crunch with sprinkles, or instead of peppermint flavouring you could make them peppermint with actual mints crumbled into it! I personally enjoy the peppermint creams half dipped in dark chocolate, they look formal and uniform.
