  • 2 red peppers
  • 1 small red onion
  • 2 cloves of garlic
  • 12 cherry tomatoes
  • 1 tbsp vegetable oil
  • 1 vegetable stock cube
  • Crushed black pepper
  • 570 ml boiling water

    Method

    • step 1

      Preheat oven to 180c
    • step 2

      Chop peppers and onions into chunks
    • step 3

      Place peppers, onions, garlic and tomatoes in baking tray. Drizzle with oil and roast in oven for 15 mins
    • step 4

      Desolve stock cube into boiler water
    • step 5

      Mix all ingridients together and liquidise until smooth
    • step 6

      Season to taste
