  • Oil
  • 1 sheet puff pastry (I used chilled Just-Rol ready rolled)
  • 3 Rashers bacon cut into small pieces
  • 1/2 Onion finely chopped
  • Grated cheese
  • 3 Eggs
  • 6 Tablespoons Milk

    Method

    • step 1

      Preheat oven to 180C
    • step 2

      Lightly oil 16 holes of muffin/cupcake baking tray - you can use a pastry brush or just wipe it around lightly with a piece of kitchen roll if you don't have one
    • step 3

      Put a small amount of oil in a frying pan and cook the chopped bacon and onion until lightly browned
    • step 4

      Cut out circles of the puff pastry - they need to be just big enough to come up to the top of the baking tray holes A cookie cutter is ideal but you can also use cupcake/muffin cases as a guide
    • step 5

      Place the pastry circles in each of the muffin/cupcake tray holes to form cup shapes
    • step 6

      Spoon the bacon and onion mixture into the pastry cups
    • step 7

      Place a pinch of grated cheese on top of each of the pastry cups
    • step 8

      Whisk the milk and eggs together in a jug
    • step 9

      Pour the egg and milk mixture into each of the pastry cups
    • step 10

      Bake for 12-15 minutes or until lightly browned on top
