Cake

  • 200g Caster Sugar
  • 200g Softened Butter
  • 4 medium Eggs, beaten
  • 200g Self-raising Flour
  • 1tsp Baking Powder
  • 2 tbsp Milk

Filling

  • 200g Caster Sugar
  • 200g Softened Butter
  • 4 medium Eggs, beaten
  • 200g Self-raising Flour
  • 1tsp Baking Powder
  • 2 tbsp Milk
  • Whipped Cream
  • Jar of Homemade Jam

    Method

    • step 1

      Heat oven to 190C Butter two sandwich tins.
    • step 2

      Cream the sugar and butter together until soft and fluffy.
    • step 3

      Add the eggs and mix together, then add the flour, baking powder and milk. Mix altogether until a smooth batter consistency is reached.
    • step 4

      Split the mixture between the two tins. Smooth until level, then bake for approximately 20 minutes until golden brown.
    • step 5

      Leave to cool then spread a generous amount of jam then whipped cream on one of the sponges. Then place the other on top.
