- 7 Green Olives
- 6 Eggs
- 2 Onions (chopped)
- 1tsp Garlic Paste
- 3 Potatoes
- Parsley (garnish)
- 20ml Olive Oil
- Saltto (taste)
Method
step 1
Wash and peel the potatoes, fry them in extra virgin olive oil until they are cooked over low heat (no colour to be obtained).step 2
Beat the eggs in a bowl add onions, add sliced Spanish olives, season them, pour it over potatoes in the pan.step 3
When the eggs starts coagulating take a plate to cover the pan and flip it and again cook over low heat. Garnish it with Parsley.
