  • 7 Green Olives
  • 6 Eggs
  • 2 Onions (chopped)
  • 1tsp Garlic Paste
  • 3 Potatoes
  • Parsley (garnish)
  • 20ml Olive Oil
  • Saltto (taste)

    Method

    • step 1

      Wash and peel the potatoes, fry them in extra virgin olive oil until they are cooked over low heat (no colour to be obtained).
    • step 2

      Beat the eggs in a bowl add onions, add sliced Spanish olives, season them, pour it over potatoes in the pan.
    • step 3

      When the eggs starts coagulating take a plate to cover the pan and flip it and again cook over low heat. Garnish it with Parsley.
