Dressing

  • 1/4 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp honey
  • 1 garlic clove, minced

Salad

  • 1/4 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp honey
  • 1 garlic clove, minced
  • 2 cups feta
  • 2 cans chickpeas, drained and rinsed
  • 1 green pepper, diced
  • 1 cucumber, seeds removed and diced
  • 10 plum tomatoes on the vine, quartered
  • 1/2 cup fresh coriander, chopped
  • 1/2 cup parsley, chopped
  • (optional: 1/4 cup chives, chopped)

    Method

    • step 1

      Combine and mix all of the salad dressing ingredients. Set aside.
    • step 2

      In a bowl, add all of the salad ingredients. Pour 2 tbsp of salad dressing on each salad portion.
