Chickpea, feta and green pepper salad

Dressing
- 1/4 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 1 tsp salt
- 1/2 tsp pepper
- 2 tsp honey
- 1 garlic clove, minced
Salad
- 1/4 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 1 tsp salt
- 1/2 tsp pepper
- 2 tsp honey
- 1 garlic clove, minced
- 2 cups feta
- 2 cans chickpeas, drained and rinsed
- 1 green pepper, diced
- 1 cucumber, seeds removed and diced
- 10 plum tomatoes on the vine, quartered
- 1/2 cup fresh coriander, chopped
- 1/2 cup parsley, chopped
- (optional: 1/4 cup chives, chopped)
Method

Combine and mix all of the salad dressing ingredients. Set aside.step 2
In a bowl, add all of the salad ingredients. Pour 2 tbsp of salad dressing on each salad portion.
