  • 250g Cous cous
  • 300g Cherry tomatoes
  • 2 Courgettes
  • 2 Red onions
  • Small can of chickpeas
  • Juice of one lemon
  • Mixed herbs
  • Chicken or vegetable stock
  • Vegetable oil
  • 1 garlic bulb
  • salt and pepper

    Method

    • step 1

      Preheat oven at 190 degrees.
    • step 2

      Chop all the vegetable and place them in a roasting tray. Sqeeze the lemon,scatter the herbs,and drizzle the vegetable oil. Mix well so that everything is nicely coated. Place in the preheated oven and cook for 45min max.
    • step 3

      Meanwhile cook the cous cous according to the pack instructions.
    • step 4

      When the cous cous and vegetables are done mix them well together. Add salt and pepper to taste.
