  • 2tbsp olive oil
  • 1 onion, chopped
  • 1 leek, chopped
  • 2tsp smoked paprika
  • 2tbsp tomato puree
  • 450g cod or haddock
  • 125g brown basmati rice
  • 175ml white wine
  • 450ml hot fish stock
  • 190g king prawns

    Method

    • step 1

      Heat the oil. Add the onion and leak and fry for 8-10mins.
    • step 2

      Add the paprika and tomato puree and cook for 1-2 mins.
    • step 3

      Add the fish, rice, wine and stock. Bring to the boil and simmer for 10mins.
    • step 4

      Add the prawns and cook for 1min.
