- 2tbsp olive oil
- 1 onion, chopped
- 1 leek, chopped
- 2tsp smoked paprika
- 2tbsp tomato puree
- 450g cod or haddock
- 125g brown basmati rice
- 175ml white wine
- 450ml hot fish stock
- 190g king prawns
Method
step 1
Heat the oil. Add the onion and leak and fry for 8-10mins.step 2
Add the paprika and tomato puree and cook for 1-2 mins.step 3
Add the fish, rice, wine and stock. Bring to the boil and simmer for 10mins.step 4
Add the prawns and cook for 1min.
