Potatoes
- 4 (~250g) Baking Potatoes
- 2 tablespoons butter, melted
- Salt and Pepper to taste
Topping
- 4 (~250g) Baking Potatoes
- 2 tablespoons butter, melted
- Salt and Pepper to taste
- 2 tablespoons finely grated cheese
- 1 tablespoon breadcrumbs
- 4 bacon rashers
Method
step 1
Preheat the oven to 220 C / Gas 7step 2
Make slices across the potato the short way about 3 to 6mm apart, making sure not to cut all the way through the potato. The slices should stay connected at the bottomstep 3
Place on a baking tray and drizzle with half of the butter, then season with salt and pepperstep 4
Bake for 35 to 40 minutes in the preheated ovenstep 5
While baking, chop the bacon into small strips and cook until crispystep 6
Remove the potatoes from the oven and drizzle with the remaining butter. Add the cheese, bacon and top with breadcrumbs and a little more seasoning if requiredstep 7
Return to the oven for 20 minutes, or until golden brown.
