Baked Salmon and cream cheese with a caribbean salsa

Salmon
- 4 salmon fillets
- 3 tablespoons cream cheese
- 1 teaspoon ginger
- 1 teaspoon mixed herbs
- 1 teaspoon dill
- 1 teaspoon allspice
- any other herbs/ spices you wish to add
Caribbean Salsa
- 4 salmon fillets
- 3 tablespoons cream cheese
- 1 teaspoon ginger
- 1 teaspoon mixed herbs
- 1 teaspoon dill
- 1 teaspoon allspice
- any other herbs/ spices you wish to add
- 1 banana
- 1/2 a sweet red pepper
- 1/2 a sweet yellow pepper
- 1/2 a sweet green pepper
- 1/2 a red onion
- 1 clove of garlic
- 1-2 tablespoons balsamic vinegar
- 1 pinch of salt
- 2 pinches of each of the herbs and spices used in the salmon
- 1 pinch of chilli flakes/powder
- 1 tomato
- juice of half a lime
Method
step 1
Preheat oven to gas mark 6 or 280 degreesstep 2
Cover a baking tray with greaseproof paper, and lay the salmon fillets on topstep 3
Place the salmon in the oven on the middle shelf for 20 minsstep 4
Whilst salmon is cooking, mix the cream cheese, herbs and spices in a small bowl for laterstep 5
Crush the garlic, and finely dice all the vegetables, banana and onion. Put them all into a serving bowl, and and add the salt, herbs and spices, chilli flakes, lime juice, and balsamic vinegar. Stir for 10 secondsstep 6
When 20 mins is up, take the salmon out, and place each on a plate. Top each with a dollop of the cream cheese mixture.step 7
Serve with a helping of the salsa
