- Skin on chicken quarters
- 2 onions
- 2 garlic cloves
- 2 large mushrooms
- Dash of cayenne
- Curry powder ( to taste)
- Pinch of salt
- 2 chicken stock cubes
- Corn flour (to thicken)
Method
step 1
Sprinkle curry powder on to skin of chicken then place in oven proof dish for 1hrstep 2
In a separate pan cook onions, mushrooms & garlic on the hob until softstep 3
Add chicken stock, 2 tea spoons curry powder & dash of cayenne and bring to boilstep 4
Mix corn flour with cold water and add to pan with onions etc to thicken - stir quicklystep 5
Turn heat down to simmer then add cream and stirstep 6
After 1 hour take chicken from oven - either pour the creamy sauce over top or serve separatelystep 7
Serve with basmati and wild rice and coriander & enjoy xx
